Lights Out

Nobody likes gin! But here’s a drink that everyone loves. Be sure to serve well shaken and very cold.

Ginger Syrup

  • ½ cup sliced peeled fresh ginger
  • ½ cup Turbinado sugar
  • 1 cup water
  • ¼ teaspoon pure vanilla extract

In a small saucepan, combine all the ingredients except the vanilla. Bring to a boil and then reduce to a simmer. Simmer for about 15 minutes until the syrup is reduced to about 1 cup. Remove from the heat and stir in the vanilla. Let steep until cool, then strain through a fine mesh sieve. This can be made ahead and refrigerated for up to one week.

cocktail

  • 1 ounce Ginger Simple Syrup
  • 1 ounce fresh lime juice
  • 1 bottle Pilsner Beer

Pour the gin, ginger syrup, and lime juice into a shaker glass filled with ice. Shake and pour into a stemmed wine glass. Top with Pilsner.
